While you are working on certification, it would be great if you could pick up some part-time Community College teaching... it would slot well into your CV.
Did you look at the small colleges in Oman? You could have picked up the tertiary experience with Arabic speakers. The Oman jobs are good for entry level in to the area and if your secondary teaching was after your MA, you could have likely received an offer.
But... it is still a good idea to get your state certification from home...
