I've flown between the US (East Coast) and Taiwan many times over the past decade. I've tried various airlines each time, usually because of cost and other preferences. I've never done the transfer from HK, just Tokyo. Not sure if there's a cost/time difference.
I believe Taiwan's EVA airlines flies from LAX. Not sure if it's direct or via Anchorage. I've never flown EVA because the cost is much higher than others.
I've flown American Airlines a few times and it was OK. United might be cheaper and offer more options, however my past few experiences flying UAL were full of very unfriendly attendants. If you're flying from O'Hare, that may end up being your best bet as far as minimizing cost and transfers.
My wife and I have always received excellent service flying JAL (Japan Airlines). We flew ANA last time and it was good, too. [ANA and UAL are both members of the Star Alliance]
For what it's worth, I've flown into TPE and Kaohsiung, so both are possible depending on which airline and where you're coming from. |

When I flew over - it was MIA - LAX - TPE.
Flew with China Airlines - decent flight, ok food - ok inflight entertainment.
Also, saved a few bucks. |
