Ok I know this is a really stupid question, but!!!! I am taking a trip to Kiev soon to do some work for my university there. What are some traditional Ukrainian dishes? Are there many international restaurants? Thank you!

Some traditional Ukrainian dishes are:
Varynyki- It's basically the same a a Polish pyrogi, pasta stuffed with potatoes or cabbage;
Palmeni- varynyki with meat;
Borscht- cabbage and beat soup (much better than one would probably expect).
And anything with potatoes, potatoes, potatoes.
Oh, and traditional salads are with cabbage, they're not big on lettuce.
Kyiv has many (relative to the rest of the country) international restaurants, like a TGIF's, McDonald's, etc. International foods are beaucoup bucks there (in relation to eating local fare).
Oh, and one more thing, be sure to try a Ukrainian hot dog! Mushy with cabbage, corn, scallions, mayo, mustard, ketchup and, to top it off, carrots! Yum!
Enjoy Kyiv. It can be a wonderful city, especially in the summer.

It's true about the beet soup. try it with sour cream. Even the simplist stuff seems to taste better here (In CIS). Buy local, it's good. Lots of good dairy products, and sour dairy products too. I'm assuming it's much the same as here (up north). Fresh milk, home-made cheeses, Oh yum, yum, yum, yum! Hit the markets. Try the pickles! Have some squash! And oh, the sweets. Don't worry, you won't starve. Enjoy.

I just heard about soup based on kvas (mild beer). Anybody ever try it?

This weekend I had some home-made cheese that was so amazing. And I had what was quite possibly the best glass of milk I've ever tasted.

And don't forget the wild greens! Nothing like soup made from extremely fresh wild greens.
