Specific to teaching English in Mexico, does anybody have any suggestions or experience with which certificate is most recognised?

There isn't much distinction on the average. You'll find administrators and school owners that prefer one over the other (often down to British vs American), but even that is often trumped by other teaching experience or the demo class you give in an interview.

CELTA has the advantage of predictable course content based on the name alone, whereas TESOL (or TEFL) is more generic and dependent upon the course provider.

I have to agree with this. Also, the other thing you should keep in mind is a CELTA is useful around the world; it helps landing jobs in Saudi Arabia, Korea, Japan, and China. I have found my CELTA to have already paid for itself in opportunities gained, and I received my CELTA in May of 2013.
