Do people get pickpocketed often in Beijing or the rest of China (in apartment or anywhere) and do you recommend taking your iphone to China with a new sim card?

No. But it does happen. I would not recommend an iPhone anywhere, so another person might give some feedback on that. I have been scare of being robbed once here. I had all my things, as I was moving, and arrived at the train station after a 33 hour trip. I was dead, so I set up next to the cop hanging out at the train station and waited. The train trip is what killed me, but train stations are a hot spot for handy people.

Also, remember, if you live on lower floors especially, to keep things locked. If they do get in it is usually a quick grab of what you leave lying around. I would suggest leaving valuables close to where you sleep. There is less danger of someone waking you and a conflict.
