The institutions rent hotel rooms and the interviews are conducted in those. I did on interview in the booth with a school but that was the exception. You are assigned a number and if you have been called for the interview, your number will appear on a board. You only apply for the jobs you want. You look at a catalog and submit your CV with your number on the top to those potential employers. No one will know if you've applied to one place and not the other.
