I am an American certified EFL teacher, with three years of experience. I realize the difficulties of not having EU citizenship, but I also know that it is not impossible to find a job without EU citizenship. There is a French-American work exchange program where Americans under age 35 can get a work visa for up to 18 months. I am hoping to find work in Paris. Any help would be much appreciated. Also...any knowledge of what Wall Street Institute Paris is like as an employer???

I haven't heard good reviews of Wall Street. If you are an experienced teacher, you wouldn't want to be hired by someone who is only interested in supplying the consumers with the "product" but is not interested in the quality of the instruction.
I almost applied there but read several opinions about it, and declined the position.
But please conduct your own research.

Wall Street is rather like Berlitz or all those other franchises. Not good to work for. No serious professional would sigh on the dotted line with these people. Having that on your CV will not be an enhancement !!
