I'm trying to get ready to teach at a Uni in China. I'd love to buy a book or something that has lesson plans in it. I feel like if I had that, I could start creating my own as well.

You don't need a book; there's tons of TESOL content (i.e., lesson plans, activities, and learning materials) on the Internet. Besides, there's really no such thing as "university lesson plans" unless you're referring to academic English or English for Specific Purposes, which I doubt you'd be teaching. (Hopefully, you completed a good in-person TEFL cert course.)

Ask for input over on the China forum since those posters are familiar with uni teaching and managing large classrooms.

I'm sure someone has written a blog or ebook with their lesson plans, in fact I remember reading one years back by a young teacher in Xi'an or somewhere, but I can't remember his name or the web reference.
However, I found other people's lesson plans or curriculum rarely worked for me ; ditto for some of the activities on the ideas page here on Dave's.

The best resources I found were online at the BBC, or some of the EFL publishing sites, or on the IELTS training sites, where activities, and whole lessons could be adapted for use in the Chinese Uni classroom.
Also some American Unis have very professional esl/efl websites with ideas and lesson/curriculum plans.

I like esllibrary.com

Lots of options. Weakest link is pronunciation.

I also sometimes use books for primary grades designed for native English students. Scholastic.com
