PLEASE help me make an informed decision....Italy or Greece and why?
Things to think about: Opportunity, pay, community/lifestyle and all the things that I would probably not think of..................

I would choose Italy every time, though it naturally depends on your background/expectations. I have worked in both and definitely had a better time in Italy. Italian culture is considerably more open, most people find the language easier to pick up, the food is great and, especially in the South, you should be able to make your money go a long way. There is a certain amount of ageism (inverted) and sexism (standard) but, as long as you are not expecting "Under the Tuscan Sun", or some such naive whimsical bullshit, most people should be able to cope with that. Greece can be good, but if you opt for that just be careful not to get stuck in a tiny village teaching unwilling teenagers.
