I am pretty sure I will be moving to Osaka this summer to live with my fiancee and have already contacted a few of the bigger companies with contacts here in the US.
Fortunately, since money is not a huge issue for us, I am wondering if I should catch on with one of these companies before going over or look for something once I get there. I'd hate to hook on with a place now and regret it once I get to Japan knowing I'd have to stick it out for a full year.
Does anyone have advice for me?

You don't have to "stick it out" for a year. You can quit anytime and find another job. Your visa will follow you.
That said, what are your qualifications, not just for teaching, but for a work visa? Either one might seriously limit your options.
