How fast does QU process the paperwork once an offer is accepted? In other words, how long can it be from accepting their offer to arriving in Doha? Thank you.

Often if not nearly always, processing of paperwork is not dependent on your employer but on the Ministry of the Interior. Your employer has no control over the security check process or on how fast your paperwork moves through that Ministry.

Today is National Day and like so many other holiday periods, processing can slow to a crawl, QU is also on their winter holiday which may lead to delays as well.

Patience is something you have to have a lot of when dealing with this type of thing.

There has most probably been no increase in paperwork for new hires, that is between the Ministry and university. That said, there could be an added decline in the efficiency of the QU HR department, but this has never been a fast and efficient system at the best of times in any country in the Gulf.

There is a reason why most hiring is done in March for starts in August/September.

They are desperate for teachers and will hire your girlfriend. Paperwork no different from other places. Newbies are lucky as they get more money than the teachers hired on earlier contracts, this is one of the reason so many people gave late resignations last spring - they were upset by this discrepancy. Also they have been considering people without an MA - so a lowering of standards.
