Anyone with any experiences of this? I don't know how to drive. To get a job in Mex where I was required to drive, would I need to get an international driver's licence and can this be done there?

First of all, it seems highly unlikely to me that there would be an English teaching job in Mexico that would require a person to drive.

Once you have your working visa, you can get a Mexican driver's license which is a very straight forward process. I will tell you that both me (an American) and a colleague from the UK agree that driving in Mexico takes a lot more skills than it does in our home countries.

I drive, but cautiously, not to new places where I have never driven before (yes, it's rather limiting). However I did teach my then teen-age daughter to drive, and with the reflexes and confidence of youth, she is much better than I.

Don't bother with an international license (which isn't really a license anyway, merely an official translation of your home country license), just get a Mexican one. In some states (such as DF), there isn't even any test or requirement to be able to drive; you just present the usual ID and pay the fee.

Do it quickly, the PAN is advocating reintroducing the test in D.F.

Given the appalling standard of driving in Mexico, any instruction you receive or even any examiner's assessment would really be a case of the blind leading the blind!
