Hi there,
Me and my partner are heading to Brazil and want to do a language course before getting work. We want to go somewhere relatively cheap and safe (I've had the sh*t kicked out of me once I'm not so keen on it happening again). I believe Natal is quite safe so ideally there. Any thoughts will be greatly appreciated.

In 2003 all Brazil was cheap, today the exchange rate has changed all that. Relatively, smaller cities will be cheaper.
Try Sao Luis, Natal, Joao Pessoa and Maceio. All of these are good choices.
Maybe the safest out of those IMHO is Joao Pessoa. Locating a language course here may involve approaching the local schools to find out if they can offer you something.
Joao Pessoa has the best urban beach in Brazil IMHO, Cabon Branco. Big, beautiful, queit during the week, busy at weekends.

Maceio is in the state of Alagoas which has some of the best beaches in all of Brazil.
