The boss takes just me out to eat with his family. Tells me I'm his best teacher at the hagwon. Says parents are waiting to see if I re-sign before they sign up their kids. In the heat of the moment, I hesitantly agree to stay for another year.

But I don't think I want to.

So how do I get out of this without destroying the 'relationship' and ensuring that letter of recommendation (not to mention the flight back)?
FWIW -- my original contract is up in late June.

Ain't official till you see a contract. If you don't want to work for him just tell him the truth; you changed your mind.

THis JUST happened to me. Tell them no. Otherwise they will not give you the recommendation letter. Make it clear you're going bakc for personal reasons, nothing to do with them.

koreans are infamous for coming up with excuses that are quickly accepted.

so, say that you must return home to look after your grandmother who has become ill....or you must move to daejon to be closer to a childhood friend that has recently moved there....or you have decided to follow your dream and learn the art of celadon pottery in seoul....

If you're interested in staying just a little longer, you could also talk to your boss about an extension (not a re-signing)

if I get an extension, do you know what the visa process is? (I'm E-2 right now, it ends in June. What do I do if I want to stay only 3 or 6 or even 9 more months?

new contract for the term you want/need to extend for.
ARC
passport
application
fee (30k)
employer's guarantee (sponsorship form)
employer's business registration (copy).

Takes about 20 minutes at the counter in the immigration office.

Extension contracts, unless there are material changes to your contract, need only be a 1-page addendum saying that you will continue your employment for a fixed term (less than 1 year) under the same terms/conditions that exist in your current contract. Sign, counter sign, witness and red-stamp. Good as done.

Extensions do NOT need to be for a full year. Your ARC will be amended to reflect the change (until the last date indicated on the contract).
