This might sound like a ridiculous question but I'm going to ask anyway.
My sister in law from Canada is visiting in a few weeks. We have some vacation days and we are planning a trip to China. Is she going to have problems re-entering Korea for a second time on our way back from China? Our trip to China will be in the middle of her stay here.
Is the tourist visa she gets on arrival only a single entry or how exactly does that work? |

As a Canadian entering Korea she gets 6 months "entry on arrival".
It is not a visa so when she leaves she gets an exit stamp.
If she comes back to/through Korea she gets another "entry on arrival" stamp that is good for 6 months from that date of entry.
There is no real limit to the number of times you can enter and leave as long as you have a valid reason for doing so (and visiting friends/family, transit, tourism are all valid reasons).
