Are you familiar with (BEC) Business English Certificate exams? There are several course books published that help students prepare for these exams:

Cambridge English: Business Preliminary (BEC Preliminary) – CEFR Level B1
Cambridge English: Business Vantage (BEC Vantage) – CEFR Level B2
Cambridge English: Business Higher (BEC Higher) – CEFR Level C1

I'd recommend searching for a Facebook or other social media site dedicated to helping students prepare for these tests and invite like-minded students to practice role-plays with you over Skype. There may even be a Skype group. Let us know if you find something like that.
