Could our Chinese friends tell me the best way to send money to China as a gift for a new baby.
Should I send a money order in Chinese RMB, or Canadian Dollars?
Should I send cash.
Or is there a better way?

I think most chinese will send cash to new parent.
But if you want to send some other gifts,i think something like milk powder,diaper or some bread & butter things will be good choice.

I will send money to new parents as the gift. Because it's too hard to find other things more suitable.
Last time I went to visit my fridend who's baby was just 12 months' old, I bronght her a baby suit. Even it was already for more than 24 months' old baby, but not big enought for my friend's. Finally I had to left the invoice to her and let her exchange another one with bigger size when she had time.
