I am looking for materials to put together a program for gastronomy students at the intermediate - advanced level. Does anyone know of any good resources?

I am trying to put a program together for intermediate - advanced level gastronomy students. I don't believe there are any textbook courses for this specialty. Does anyone have suggestions?
