Short Stories for University and Adult learners

Hi Everyone!
I am currently teaching students aged 16 and up in Colombia. Most of my students are between 18-25. Every week I hold a 2-hour reading club where we read and discuss a short story. The problem is I get a large variety of levels and finding the right stories can be tough. So far we have read stories by Isabel Allende, Mark Twain, O. Henry and Anton Chekhov. I really want to diversify my selection and have authors from all over the world. Can anyone suggest good stories that we can read within the 2 hours that are fun and a good level. Thank you!

Roddy Doyle is an author that works well for me.
