Human Rights Issues Courses for High School

I was wondering if anyone had any ideas or experiences of teaching a human rights course or minority issues course at a secondary institution. I am planning to teach a course on this topic as I was given the suggestion to start a reading course on the matter. I would also like to try discussions. It sounds like something too complicated to explain to high school students, but I think it can be done with the right methods and application. Any suggestions or ideas are welcome on this matter.
