ESP texts for lawyers and hospitality workers?

I'm teaching at an all inclusive resort in Mexico, and would appreciate any suggestions you may have for employees of the resort. There are two levels involved. Some are absolute beginners who cannot even read their own language well. The others are the executives of the resort, most of whom have advanced-level grammar, but need pronounciation help through listening and speaking. Any suggestions would be appreciated.

I was a paralegal instructor in Canada for almost ten years before I got my TESOL degree. A Mexican lawyer here has expressed interest in getting a number of his colleagues together for lessons in legal terminology and drafting documents. Most are good listeners and speakers, but need help with legal vocabulary and writing. Does anyone out there know of any material which could be used in such a specialized class (or anything with a legal theme)?
