Advice Required on Wading Through cvs

I've enjoyed the position of DOS at my school, The English Studio for the best part of a year now and obviously one of the most important parts of the job is recruitment.
Nevertheless, I've found that it's not an exact science! Sometimes a candidate may have the dream CV and it might not work out and on other occasions, I've given work to teachers just starting out and they have blossomed into top-class EFL professionals in a mere matter of months!
I have noticed that in general, the less verbose a candidate's covering letter is, the more successful they tend to be in the classroom.
Has anyone out there got any other rules of thumb they follow when wading through cvs?
