I have heard that there is a lot of private tuition around Dubai from someone I know of posting a few adverts locally there, however I assume they'd be on some sort of work visa?
Can you apply for a two month visa for what is self employment? |

I'd say no. Employers are the ones who get you a work visa. Those doing private lessons are likely spouses of someone who is there with a legitimate job or those with a full time contract doing privates on the side.
BTW, nearly every contract in the Gulf will state that you are not allowed to do any work on the side. People often quietly do privates, but it gives someone who wishes to make problems for you a way to get you fired.
The Gulf has an extremely high cost of living. It is not a place where one would ever consider dropping in for a month or two to do some private lessons.
