I was wondering if anyone had an idea of what kind of documentation a university would like as proof of past employment.

Is it necessary to go back to my former employers and ask for a letter stating my time of employment? If so, would should they include in this letter/document?

Any advice would be appreciated.

Try to get a headed letter from your previous employer stating the following:

1. Position title with your specialism
2. Start and end dates of your employment
3. You job duties - if it is a teaching position, you need to state which modules./courses you taught and at which level.
4. If you were involved in curriculum/course development, then you need to list these as well.

It is preferable the experience letter to be signed and stamped by your HOD or the Dean.

Thank you for your answer. In the event that head of the department is no longer at an institution, is there something I could provide in lieu of what you have suggested?

mine specified that my letter should include day/month/year- day/month/year. When I first I applied I had 7 years of experience however because not all my letters followed that format they only accepted the ones that did which added up to only 4 years of experience.

Wasn't it possible to get the letters amended?

well the first place I worked for got shut down Shocked it was a language school. they didnt do proper paper work so I think they got busted. Another place was in Dubai, I was not able to get them to do it and send it to me. Unfortunately I had left the last place without any notice so they were quiet angry. They refused to give me anything. I was lucky to get a piece of evidence that proved I worked there. Embarassed

So that left me with only 4 years of experience.

That date format, day/month/year, isn't followed in every country. For example, the US uses month/day/year. Regardless, since the letters are official and rather formal, all but my Saudi experience certificate have the months written out (e.g., June 2, 2013, to June 2, 2014). It clears up any confusion.
