Not immediately. But if what I read was true, then I'd be barred from working for a period of time after visiting which would affect employment prospects there.

There are other countries of course: Saudi Arabia, Qatar, Oman... But I just wondered if a trip to the conference would knock the UAE off the list.

You'll be fine since you're only visiting. Lots of foreigners head to the UAE for some R&R; it's a tourist hotspot.

A few years ago I read that if you enter the UAE on a tourist visa, then you are barred from working there for the next few years. Does anyone know if that's true? If it is it would make a trip to the conference a little less valuable.

Considering the number of teachers who come to the conference to get a job for the next academic year... ie the next Aug/Sspt... there would have been dozens of teachers here bemoaning it, if it were true. And it has never been reported here.

You cannot be recruited from within UAE while on a tourist visa. You leave and go through normal procedures. I am sure there is no ban on those who have recently visited as tourists.
