Two different jobs and I've had two different experiences.

First one for a local company, all visa costs, medical etc were paid for by the recruiter upfront, I paid for the flight which I got back about a week after arrival.

Second job, a very reputable American multinational company, I paid all visa and medical costs, and the company booked my flight for me. All costs to me, including a new passport, travel costs to get the passport, taxi to the airport because of a strike, were paid the day after arrival in KSA.
I'd also add that the American company were very good at putting me up in a hotel for two weeks while I waited for my Iqama to go to the site, and providing full access to the restaurant there free of charge.

With the increase in visa cost, the chances of being stitched up by a bad employer, make choosing the right job even more important.

You can't do midnight runs in Saudi Arabia unless you have a Multiple exit/re-entry or single exit/re-entry visa. Those aren't distributed right away especially if you work for a bad company. What you can do is, 'You can pay my salary one week late without any repercussions. Any later than that and I stop working'.

I've been lucky that I have always been paid (roughly) on time and been given exit visas with a long validity.

Everyone has different experiences and different comfort levels. Find your own limits.
