What happens to you if you quit your job, have the 1 year visa, and freelance (private students)? Is it possible or will the kwomintang swoop down and put you in a tiger cage?

No, but you will need a full time job and a sponsor if you want to renew your work visa. Shame you will have to give up all those privates.....

You can work on the visa till it expires, even with no boss telling you what to do.

Not true. If you have one or more PT jobs that pays enough, you can renew the visa under self-sponsorship status. The figure that is "enough" salary varies from immigration office to office.
