What type of shifts are typical for teachers in Taiwan? Do you have a lot of split shifts and running around from one school to another or is it easy to get 30 or so hours at a single school?

Both are possible. It's all in what you look for and accept.

My personal recommendation.
Find two part time teaching positions paid by the hour that are close enough to make the commute in under 30 minutes. Try to avoid a large 3 or 4 hour gap between classes.
Worry about the visa problem after you find work.
Good luck,
A.
