Hey guys - One of the Uni's who caused my recent indecision told me that the contract they sent me is blank in all the important bits because it is only a sample contract - the real deal is not signed until I am actually there. How do I react to this?

OK, since you mentioned university then it means you must sign the official pre-printed contract issued by SAFEA that resembles a booklet and has both English (with spelling mistakes) and Chinese, PLUS "appendix" created by the school. Whatever you received in the mail, unless it/they fit(s) the above description, is NOT official and thus, not legally binding (legal as far as being used to complain to SAFEA should any breaching occurs). Signing an official contract is, IMOHO, a way for the school to lock up your commitment so you can't go somewhere else. I also believe this is now necessary for the school to get you your Foreign Experts Certificate (AKA work permit). After you arrive in China, then you can sign the official contract with all the nitty gritty details. I think school now prefer to just e-mail you a "sample" contract instead of mailing you the official contract because e-mails are FREE and much quicker.

Don't worry too much. They showed you a specimen so you know what to expect.
Even if it was signed and chopped, contracts are liable to reinterpretation, normally to the advantage of your employer.
Go with the flow. There will never be total, satisfactory protection.
