1) Taxes. I have heard it is 16%? do they deduct it automatically? or can I opt to pay the taxes myself at the end of the year?

2) Work Permit. They have photo copied my UK passport. And asked for my mother's maiden name- why? How can I check to see if they have officially registered me to work legally?

thanks in advance!

Cool

It is much easier to let them take the money off as you earn it. Then it is their responsibility to pay the tax and the taxman will come after them if it isn't paid.

You can't check because you're British so you don't need a work permit. You work legally without one. You do need a temporary resident's card.
No idea why they asked for your mother's maiden name. It's fairly common to be asked for your parents' names in Poland.

Tax is 19% as far as I know.

Parents names are always asked as a matter of course, to identify you.
