Summer camps are common enough, but what about winter camps? Here in South America, we have summer in January and February and so do Australia and New Zealand, so there must be winter camps somewhere.

Any one know of any?

There are plenty here in Korea...although I don't know if they are what you are expecting.

I've never worked at one, so I can't really comment on them, but there have been a lot of complaints from past teachers.

In China, there used to be an abundance of winter camps but many new regulations have gone into effect and changed the situation a bit.

Also, most of those camps used to be "expedition style" but after a number of incidents and lawsuits/prison terms, people are more careful about organizing them.

For those that still do, they usually recruit within the current staff or locally. There are still quite a few availabilities but not as much as before

I know of some in Australia in January, though they're called 'Study Tours', and you'd need to be eligible for the Working Holiday visa to work for them.

Last year I remember seeing a few advertised online for Taiwan and also knew a couple of teachers who went. Not sure if they are so popular this year or not as can't recall seeing any adverts for anywhere but South Korea.

Taiwan has them every year around Chinese New Year which is late Feb this year.
