I've found employment outside of China, but when I was applying for jobs I was offered a job from a university in China and sent a contract, even though I hadn't even had an interview. It sounded (and still sounds) incredibly suspicious to me. Was this likely one of those scams where I was supposed to unwittingly send the 'school' copies of all my documents?

Not at all suspicious; par for the course here in China. Two of the 4 jobs I've had were offered to me immediately after I sent my C.V and copies of my passport & diploma. For one job, I was 'interviewed' via email.

That they sent you a contract so rapidly is not in itself suspicious. Now if you take time to read it then peruse the contract sticky and some of the contract threads we've had the past year or so, you might well find something suspect. Or not. Schools often find themselves with an acute "vacancy now!", and not always because they are bad schools.

Beware of sending transcripts that have DOB and SSN info on them. USA transcripts often will include full name, date of birth, and student number = social security number.

Nigerian scammers operating around the world (including in China) use this information for a variety of purposes.

If they start asking for more detailed information like this along with a various number of documents, you must be careful.

In the past data collection from foreign teachers have been used to create the templates for the underground FAKE Degree software program they use out there.

If you must send transcripts blank out your SSN and DOB info or any other kind of information they can use for their scams.
