Does anybody out there know how difficult it is for non-EU passport holders to get ESL jobs in Greece? What's the procedure?

Difficult to impossible.
Private language schools can't help you with work permits.
If you have specialist qualifications, you may be able to get into an official international school. This usually requires a qualification to teach a core subject such as math or science in your home country + some experience in doing so.
Military bases are also an option, but, again require serious quals.

For a non-EU citizen with basic quals (BA in something + TEFL/TESL certification + some experience) there is, unfortunately, very little chance of legal work.

It's not good news, and you may find the (very) rare exception, but this is the general rule of thumb.

supposedly, Via Lingua is helpful with this. any non-EU Via Lingua grads have any comments about this?
