Korea is undoubtedly the best for saving money, since employers there usually provide housing. However, the value of the won is dropping, and there's a lot of competition (I'm trying to get a job there right now, myself). Second to that is Taiwan, where you usually have to pay for your own housing. And there, too, the value of the NT is dropping.
That said, the value of the US$ is dropping as well, so perhaps the exchange rate won't be so bad.
I've never taught in the Middle East, but I understand you can save quite a bit there. I have a friend who is headed there with precisely that in mind.
