Sang Sang gives a better rate of currency exchange than any of the banks or money exchange places that I tried (and I tried a few!), sangsang1993.gmail.com, Tel 94941414, located in Shatin 沙田中心商场L3 22K (KCR, Mark & Spencers, SangSang).
There's also a Coach company (above Price is Right, near Royal Hotel) gets you from Shatin to Guangzhou (various locations) for HKD60/RMB70.
