In all this time in Mexico, I've still yet to try real pulque, but I had pulque curado, i.e. flavored, in the Restaurante Chon downtown, which also serves unusual meats such as crocodile and ostrich. My experience is that the curado doesn't have the desired effect!

In my opinion Pulque is the most disgusting liquid, both in flavor and consistancy, that exists on the planet.

You can stew chicken pieces in pulque (include a generous number of whole, peeled garlic cloves) for an unusual and tasty dish.

Pulque must be drunk fresh fresh fresh, as fermentation is still in progress--if you think it's disgusting, there's a good chance the pulque you tried was already past it's prime.
It's nice, but rare to find it "right" these days. Ten years ago I knew several places to buy it, but those places are gone now.
I would never recommend buying to to drink later for the above mentioned reasons. You got to buy it to drink in that moment.
And it's one of those things that does not taste like it smells. So if you have a very good sense of smell, you might try holding your nose as you bring it up to your mouth to drink.
I remember being told by a professor of food science about all it's health benefits, but I no longer remember what those are. Razz

You can buy pulque in downtown DF, there is a place on Plaza Garibaldi that has it, refrigerated. There are people in Michoacan who sell it for instance at the foot of the Jose Maria Morelos statue on Janitzio Island in Lake Patzcuaro. The consistency is not very liquidy, you could say it is baboso...kind of foamy but in a slimy way. But it is surely full of antioxidants, isn't anything that grows in the full on sun full of antioxidants?

Does anyone know where to get Lechugilla, a drink that is not alcoholic but made from maguey? In the mid 80 s you could buy it when they still sold drinks in small sealed plastic bags, for like a peso and a half. But the soft drink manufacturers probably put all of those traditional drink sellers out of business. It seems like millions of hectares of Mexico could be used for growing magueys that could provide income for people with lands that might be practically useless for anything else, wouldn't you think?

Yes, you have to drink it fresh, which probably means you're drinking it at nine in the morning in some places. Razz

It's very yeasty and given the color and consistency, it's rather reminiscent of sperm, but mixed with Fresca at nine in the morning and passed around a good group of friends, it's an experience worth having. Wink
