Before I got into teaching, I always thought one of the biggest perks was getting paid during that long summer vacation (not to mention Christmas, spring break, etc.)

Lately though I have come across more jobs, not so much at uni level but at secondary and primary level, that are offering contracts just for the school year. They are apparently not worried about finding new teachers each year, or enough of them sign up again after a summer without pay.

Is this in fact the trend?

This is the norm at private language schools in Europe.

I've seen adverts like that a lot for China for many years. The thing is that in China, it's easy enough to find a summer camp job in China or Korea or Taiwan.

Often you can renew before you go on vacation, so you can either work for 2 or 3 months or go on vacation and still have a job to go back to.
