Years ago, I ran a restaurant in California. I learned (from the Board of Health inspector) that towel drying is a no-no. Air drying is considered the only safe way to go. The idea is that the towel will pick up whatever stray bugs are on a dish, along with whatever stray, unseen particles of food are there, and it will keep this mix damp. That makes a perfect breeding ground for the bugs, which you then swab on your next batch of dishes, etc.

(Of course, it's a lot drier in California than in Taiwan.)

I used to live in Hsin Ying, an insignificant little dungheap between Chia Yi and Tainan. I drank water straight from the tap. I reckoned it was clear and didn't smell, so what the heck. Didn't harm me a bit. Must have been all that Taiwan pijuo I swilled that built up my immunity!
