So, what kind of salary should i be aiming for/realistically expect in Mexico? And can i live happily on it? After being a student/saving/volunteer for a few years i can't really be bothered to have to tightly budget anymore. And is it not so good to look for jobs from here?

As you probably already know, an acceptable salary depends on cost of living in a particular location. Where I am, I'd say anything less than 50 pesos per hour after taxes would make for a really tight budget. I don't understand your comment, "i can't really be bothered to have to tightly budget anymore," so I don't know if you could live happily on x-wages or not.

I think there are pros and cons to looking for a job from there. If you are offered a job prior to arrival, there is the security (more or less) of knowing that you have something lined up in advance. Personally, I'd want to see the school, meet my employer in person, talk to other teachers at the school, and get a feel for the location prior to accepting a job, but that's just me.
