If you are working on an "L" visa, unfortunately there will be very little you can do legally. This is also true if you are working on a "F" visa.
You could assume the schools or companies ignorance of the law, although I am pretty sure if it is a biz they will be familiar with it - and threaten them with court and even hire a good lawyer to send some letters to try to get them to pay. CJs advice is very good; with so much money at stake for the company - a paper-tiger isnt going to do it. You need some teeth.
If you have a "Z" type visa, you can genuinly go after these guys; take them to court.. Without seeing your contract its really hard to measure what the best route for you is. Also, if it was a third-party company that sponsored your Z-visa, (as what happens in alot of these cases) then you need to put pressure on them.. They would be the ones liable to your situation. Always get a Chinese to go up against another Chinese whenever possible.
For sure though, your situation sucks, and remember, you only have 30 days from end of contract before you need to either renew your visa, re-sign a contract and have the school convert it, or leave the country. .
