Wow Melee, that all sounds delicious.
I am not sure about the Pancita though. Cow's stomach in a broth

I thought pancita was pig stomach? Either way, I tried one mouthful and could not swallow it.
Chicharron has started to grow on me though...with a good guacamole. |

I don't do organ meat. Or skin, not even chicken skin, much less pig skin!
In my town we have to pancitas, regular (pork) and pancita de res (beef).
Mole is fabulous. Chocolate and chile are like chocolate and peanut butter, "two great tastes that taste great together." Try a pinch of chile in your hot chocolate on a cool December night.
Though I've found over the years that Brits have a harder time adjusting to the food than Americans do. I guess because Mexican food has had a much bigger influence in the States. But you'd think the amount of Indian food the British consume would have prepared them for hot hot hot? |

Living here in Korea, spicy food is the norm. Although, as a Brit I am ashamed to say I don't like spicy curries which blow your head off. I think eating Korean food is good preparation for spicy Mexican food.
