Desert Date,

I think your plan to take off a year and learn Arabic might be a good one. At the same time, you could suppliment your income doing part-time teaching or private lessons.

North Africa or the Levant would be best for that since the Gulf isn't a great place to learn Arabic. If you do a search on here, you will find that this idea has been discussed a few times in the past.
