Until you are hired, there is no need to provide passport number. Go ahead and copy the picture page if someone asks during the application stage, but feel free to delete the passport number until you are actually hired. Some employers just want to see your face and prove your nationality.
Date of birth is a given. No reason not to provide it, IMO.
