One thing that you didn't mention about yourself is what you did between graduating from high school and graduating from University. While at first it may seem completely irrelevant--it just may help in pointing you to an appropriate niche.

I've always taken short-term jobs, just to get by. I got into carpentry and I have built some very nice stuff. Check out these photos:

I have other skills. I'm a pretty good mechanic. I used to do legal proofreading as a temp, in New York City.
I never stick very long at a job. I'm having a hard time figuring out what to write on my resume.

Legal proofreading sounds good. I know two people who teach Legal English courses. Cambridge even has an exam for legal English now. http://www.cambridgeesol.org/exams/ilec/index.html
Also other kinds of English for specific purposes often deal with the language of manuals and instructions for various vocational processes. I know most of the equipment my university has in its various labs for engineering students came with English only manuals.
