Guy, I can't believe you buy Brazilian Coffee in Mexico. How very unpatriotic of you! The states of Veracruz, Chiapas and Oaxaca, make excellent coffee.


Melee, thanks for the tip about using Legal for making caf� de olla. Do you have a recipe for making it that you could share with us?

I am always looking for reasons to avoid Starbuck's, and the patriotism issue could be a new one. I wonder if Starbuck's uses Mexican coffee or imports it from elsewhere...

I haven't been there for 5 or more years, so maybe I'm remembering wrong. I think Starbucks has all sorts of coffee, you can either choose one, or ask what "today's coffee" is might be Kenyan, Brazilian, Mexican, etc.


Caf� de Olla

Boil a couple of sticks of cinnomen in a pot of water (better if it's a clay pot) I throw in one whole clove as well--but that's optional.
When the pot is at a full rolling boil, turn the flame as low as it will go and add the coffee. Simmer for several minutes then stir in course sugar. If you are using pilloncillo add that at the start so it has time to disolve. Only use refined sugar in a pinch. (this last goes for everything not just coffee!)

I'm not allowed to agree with you on that one as I'm currently awaiting an answer from the company that produces it, regarding English classes!

I agree with MELEE regarding using LEGAL for Cafe de Olla - we use it.

MO39, I gave the recipe earlier in the thread, and MELEE had some further suggestions.

Whoops, I didn't see MELEE's reply above.

I'd just add one thing. ONLY use piloncillo, and buy the small individual one, as the big ones are nearly impossible to break accurately. You can buy them in a store that sells loose items, nearly on the corner of Felix Cuevas and San Francisco in Col. Del Valle. And in the food market between La Lagunilla and Tepito. Otherwise, the small ones are difficult to find.

I'll combine Melee's and Phil_K's suggestions to finally make a good caf� de olla at home. I just hope I can find the ingredients in my neighborhood.

So that's what I did wrong...I first tried it years ago when I first got here...never thought to brew it differently.

Oh I know Mexico has the good stuff too. This particular Brazilian brand is at a good price and tastes very good. As for green credentials, yeah I guess I fail, though I know nothing of the green-ness of producing the coffee, either in Brazil or here.
