Jeez! I don't think I've ever practised for an interview in my life.

Neither have I. IMHO, the OP needs to relax and have more confidence in himself. With his excellent qualifications (an MA and ten years experience) any reputable school should be thrilled to have him on its staff. Maybe all that practicing made him seem too "rehearsed" to the interviewers he spoke with...

What do EFL employers like better: functional or chronological resumes?
Yes.

A chronological CV is meaningless if it is not also functional (meaning that it performs the intended function).

I envy those teachers who don't need to practice for job interviews. I'm not one of them. I didn't do this during TESOL Arabia English teachers conference. So, I do these things....

(1) I record myself on MP3 player and listen to evaulate for voice quality and content.

(2) I listen to myself on the way to work or in free time to get a better handle on the questions and my answers.

(3) I role play a job interview with friends.

(4) I've collected about 30 questions from previous EFL teacher job interviews (in Korea and the Middle East). I group these questions into categories (general background, behavioural, relating to others, materials, course design, and teaching skills). I write my own answers (after reflecting on my experience) and memorize. I don't memorize word by word but by ideas so I can apply the ideas to any question that may be asked.
