Keep things interesting, difficult and as interactive as possible (I often fail at the third point but hey). Use mixed media, which includes video, and get kids to do at least one discussion problem in each class.

Student not paying attention - ask them a question. Not in a "raaarglebargle how dare you not listen" kind of way, but just in an ordinary, everyday manner. After the third or fourth time this happens, the kids will notice that you are paying attention to them and act accordingly.

Lots of prep. helps too - I only listen to people if they are talking sense.

This is exactly what works. Anyone can prepare a 20 slide powerpoint presentation, and ramble on from that, and that's exactly what puts people to sleep. Instead inject some short video clips, photos, or real life experiences into the presentation and you should get the results you want. This is especially true for any of these "culture" lessons.
