So here's my question.

I have an offer of employment from company X and have accepted it just to get out of my current situation, but company Y has a much better salary than company X and I won't know the result for at least another 2 weeks. Company X wants me to change my current visa status to instructor. However, if I get the offer of employment for company Y, then I would need to change my visa AGAIN back to Humanities, which is what it is now.

Is there a limit on how many times you can change visa per year in Japan, or a limit in the time frame of when you can change it again?

I don't know how there could be a limit on the number of times you change your residence status. That would mean there was a legal limit on the number of times you change your job which would seem strange. If it's only 2 weeks until you find out whether you get the other job I would just wait until then to change visa. I didn't update my status of residence for 2 years when I changed from language school teacher to ALT and didn't think anything about it. You officially have 14 days to update your visa anyway so you could say you were on your way to Immigration the next day if anyone asked you but I can't think of any way that situation would arise.
