I was just wondering if its possible to sign a contract with a different school when you first enter China other than the school that applied for your z visa? |

No
Only your 'sponsoring' employer can change that Z visa to a residence permit, which is what you actually need to work in China. |

After you get your residence permit and you decide to quit can you work for another school if you want? |

Maybe yes, maybe no.
If you first employer doesn't cancel your RP ( or ask the PSB to do it) then you can work and stay.
But really you are supposed to have things legit and transferred or reissued |

I know teachers that pulled a runner to another province and didn't have any trouble getting hired again. |
