I was just wondering if its possible to sign a contract with a different school when you first enter China other than the school that applied for your z visa?

No

Only your 'sponsoring' employer can change that Z visa to a residence permit, which is what you actually need to work in China.

Maybe yes, maybe no.

If you first employer doesn't cancel your RP ( or ask the PSB to do it) then you can work and stay.

But really you are supposed to have things legit and transferred or reissued

I know teachers that pulled a runner to another province and didn't have any trouble getting hired again.

seems you've already made up your mind.....you've decided to do a runner
before you've even gotten to china!

I was going to reply to the OP again, but clearly they're extremely clever, can outsmart China and game the system, so I just bow to their Western cunning.
