Which one would you go for if you had a choice and why?

Both places have had issues for the last few years. I think that QU's problems might be settling down, but I haven't had any reputable reports on details lately.

I would personally pick HCT because I would prefer to live in the UAE, but married couples usually find Qatar acceptable. There is much less to do in Qatar... fewer options... smaller country.

Everyone I knew who went to teach at Qatar U left within a year.

Unlike Scot, I know a few teachers who have been at QU for many years (from US and native speakers) and are still there. Until the last debacle from the Ministry in the last couple years, their teacher turnover was pretty much the same as all Middle East universities.

mateacher, I assume that you have read the threads here about the Ministry changes and its effects on the EFL department. It now seems to be moving back to more what it was... or at least finding its feet after the Ministry pulled the rug out.

Again... like HCT... as a foot in the door job, it is probably do-able for a contract (3 years) if one's expectations are low and tolerance level/sense of humor is high.

Qatar U only has 18 contact hours vs. vs 25 at HCT, that is a big difference,
but what about pay, who pays more and who has the most holidays?

Check their website for holidays.

There hasn't been any report here for awhile as to what new teachers are being paid.

That would depend on CV. QU pays everyone the same starting pay... or at least did in the past... and only ever had a couple pay levels at one time.

At HCT your experience can move you up the scale... or could. Things are a bit of a mystery at the moment as far as pay and benefits.
